I love a delicious bowl of ramen but making traditional ramen with miso broth from scratch takes a lot of time. On the other hand instant ramen noodles with the seasoning packet are nowhere near the same. I decided to meet in the middle and created a one-pot recipe that transforms the instant noodles with a yummy unami taste.
This easy recipe is a great way to have a homemade ramen bowl with a flavorful broth. The best part is that this one pot ramen is extremely affordable making it a very accessible meal for everyone. I’m looking at you college students.
Only 5 Ingredients
To make this one pot ramen you will need:
- 4 cups of chicken broth (you can use vegetable broth for easy vegan ramen)
- 2 packages instant ramen (discard the seasoning packet)
- 1/4 cup soy sauce
- 1 tsp sesame oil
- 2 cups mixed vegetable (frozen or fresh vegetables)
Why This One Pot Ramen?
My inspiration for this one pot ramen recipe originated with my husband. Josh came up with the idea to take the instant ramen noodles, we typically use Top Ramen, and change them up a bit. He jokingly call it a “fancy struggle meal”. Which I find hilarious because when I was first introduced to Top Ramen as a child I thought it was the coolest thing ever. A friend of mine always made it when I would stay the night at her house and I thought she was so cool. I remember thinking that her family must be so rich to have such fancy packaged food like that.
When Josh and I first set out to fancy up our struggle meal I knew that I wanted to enhance the broth to give it a bit more of the depth of flavor that you get with a traditional ramen dish. While this take on ramen is nothing as intricate as authentic ramen that was no excuse to skip out on the flavor and delicious broth. That is where the chicken broth, soy sauce, and sesame oil really come into play.
If you prefer a vegan ramen recipe then you can easily swap out the chicken broth for vegetable broth. The flavor is still wonderful so you do not lose anything by opting for a vegan version.
How To Make One Pot Ramen
Start making your ramen soup by adding your chicken stock to a pot over medium heat. Allow the chicken stock, or vegetable broth, to come to a simmer and add in two cups of your mixed vegetables. I like to use a bag of frozen mixed vegetables for this but if you prefer fresh vegetables those work just as well.
For fresh vegetables you can experiment with bok choy, fresh sweet corn, bell pepper, or even dried shiitake mushrooms Those are all ingredients we expect to see in a traditional ramen so they would be a great addition to your ramen broth. However, if you want to make things easier, and more budget-friendly, the mixed frozen vegetables is a great way to go.
After you have allowed the vegetables to simmer for two minutes add the remaining ingredients. Pour in the soy sauce, sesame oil, and the instant ramen noodles.
The instant noodles are an essential ingredient for this one-pot recipe but the seasoning packet is not. Feel free to discard the seasoning packet altogether. You will not be needing it for your bowl of ramen.
Finally, raise the temperature to medium-high heat and allow the instant noodles to boil for three minutes. The final result is a healthy meal of the best ramen to ever come from instant ramen noodles.
Ramen Toppings
This is a great recipe on its own and you can definitely eat it as is. My family and I have done that plenty of times. However, if you want to spice things up with some different toppings there are several things you can do to enhance the unami taste in your hot broth and make it feel a bit more like you are eating real ramen.
Optional Toppings:
- sesame seeds
- green onions
- spring onions
- red pepper flakes
- soft-boiled egg
- fresh ginger
- ground beef or ground pork (leftovers are great for this)
- hoisin sauce
- nori sheets
