Chicken Spaghetti Casserole
To begin making this tasty dinner gather all of your ingredients.
For the cream of mushroom soup:
- 1 tablespoon butter
- 8 ounces white button mushrooms, sliced or chopped
- 3/4 cup chicken broth
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- 1/2 cup heavy cream
- 1/4 cup all purpose flour
For the chicken spaghetti:
- 4 1/2 cups chicken stock
- 1 pound thin spaghetti
- 2 cups chicken cut into 1 inch pieces
- 1 green bell pepper finely diced
- 1 red bell pepper finely diced
- 1 medium onion finely diced
- 1 teaspoon salt
- 1 tablespoon olive oil or avocado oil
- Salt and freshly ground black pepper to taste
Notes:
- You can substitute one can of cream of mushroom soup rather than making your own from scratch.
- If you do not like mushrooms you can substitute one can of cream of chicken soup rather than using cream of mushroom soup.
- If you have leftover chicken or rotisserie chicken you can use that rather than cooking chicken.
- You can use any pasta shape that you have on hand.
How To Make Homemade Cream Of Mushroom Soup
Begin by making your cream of mushroom soup. In a large pot over medium-high heat melt the butter. Next, add your mushrooms and allow them to cook for about 5-7 minutes until they have released most of their liquid.
Stir in chicken broth and seasonings then bring to a simmer. Add in the flour using a whisk and whisk constantly while slowly adding in the heavy cream.
Once the mixture is combined and your soup has thickened remove the cream of mushroom soup from your large pot.
How To Make One Pot Chicken Spaghetti
Using the same large pot over medium heat add olive oil to the bottom of the pot with your peppers and onions. Allow the peppers and onions to saute for 3-5 minutes until the onions start to become translucent and the peppers begin to soften.
Remove the peppers and onions from the large pot by placing them into the same container you removed the cream of mushroom soup to.
To the bottom of the now empty pot add in your chicken and allow it to cook until it has cooked through completely. If you need to add a little more oil to the pan during this step you can. If you are using leftover chicken or a rotisserie chicken then you can skip this step.
Remove the cooked chicken from the pot. Put the chicken stock in a large pan and bring to a boil. Add the spaghetti noodles to the chicken broth and cook until al dente. Be careful to not overcook your pasta.
When the spaghetti is cooked, add to the pot the chicken, mushroom soup, peppers, and onions. Stir well to combine. If the sauce is too thick you can add a little broth.

To store leftover chicken spaghetti for the next day with the best results, transfer the creamy chicken spaghetti from the pot into an airtight container. Ensure the container is large enough to accommodate the quantity of chicken spaghetti you have. Before sealing the airtight container, it’s advisable to let the leftover chicken spaghetti cool to room temperature to preserve the best flavor.

Yes! Chicken spaghetti freezes very well. To freeze your chicken spaghetti transfer to a freezer safe casserole dish. Cover the top of the casserole dish with foil and then wrap the entire dish in plastic wrap to prevent freezer burn.
When you are ready to reheat your chicken spaghetti take it out of the freezer, remove the plastic wrap, and allow to defrost in the fridge overnight.
