How To Make Costco Tortilla Soup
Begin by adding all of the ingredients, except the lime juice and toppings, into your slow cooker. This is a great way to use up leftover chicken or even a costco rotisserie chicken if you have them. The recipe is written to be able to use raw chicken breasts or leftover shredded rotisserie chicken, whichever works best for you. For the best results if you are using raw chicken be sure to put the chicken at the bottom of the slow cooker and pile the rest of the ingredients on top. If you are making this after Thanksgiving you could also substitute leftover turkey.
If you do not have chicken broth you can use a few cups of water instead. The chicken broth does help to improve the flavor but water is a great option when you are in a pinch.
Next, leave the slow cooker to cook for 6 hours on high or 8 hours on low.

Ingredients

Instructions
- Add all of the ingredients, except lime juice, into the slow cooker
- Cook on high for 6 hours or on low for 8 hours
- Remove chicken and shred. Add back into slow cooker.
- Add in lime juice
- Stir well until everything is combined
- Serve hot with your desired toppings
Notes
Layer the raw chicken breast on the very bottom of the slow cooker to help with even cooking.
