I love some good freezer meal recipes but this one has such little prep, only 10-15 minutes, that it has quickly become one of my favorites. Get ready for me to blow your mind with this easy dinner recipe.

Sheet Pan Chicken Fajitas
Ingredients:
- Chicken Breasts
- Bell Peppers
- Red Onion
- Taco Seasoning
- Olive Oil
- Lime Juice
For Serving:
- Flour Tortillas
- Sour Cream
- Pico De Gallo
- Avocado
- Hot Sauce
- Any Favorite Toppings

Easy Chicken Fajita Freezer Meal
These chicken fajitas can be made right away or they make a great freezer meal. One way I like to get the best of both worlds is by making one meal to have now and one meal for the freezer to have later.
- Start by slicing your boneless skinless chicken breasts into strips. To make this a bit easier you can freeze the chicken breasts slightly so that they will be easier to cut. Another option is to purchase chicken tenderloins that are already cut down as opposed to the chicken breast.
- Put the raw chicken into your freezer bag.
- To the bag add your oil and lime juice. The recipe calls for olive oil but any neutral oil will work will. If you do not have lime juice you can also substitute lemon juice here.
- Next, add the taco seasoning to the bag. At this point I like to massage the ingredients in the bag a bit to make sure that the chicken is coated with the seasoning.
- Following that you will slice up the red onion as well as the bell peppers. I used red, orange, and green bell pepper but of course any color of bell peppers will work just fine.
- Add the sliced onion and peppers to the freezer bag and seal it up removing as much air as possible.
Cooking Your Sheet Pan Meal
When you are ready to cook your sheet pan meal take the ziploc bag out of the freezer and allow it to defrost for about 10 minutes. You want to be able to get everything out of the bag and onto your sheet pan so some defrosting is very helpful with that. If you are planning ahead you can also take the ziploc bag out the night before and allow it to defrost completely in the fridge. Either option is going to have great results.
On a sheet pan lined with parchment paper spread out the chicken fajita mixure into a single layer on the pan.
Finally, you are ready to bake your chicken fajitas in a 400° oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°.
Serving Your Sheet Pan Fajitas
Personally, I think that warm tortillas are a must for eating fajitas. I like flour tortillas but if you prefer corn tortillas then do that. There are so many different ways to dress up your fajitas!
The fun part is to top your delicious dinner with all of your favorite toppings. Whatever you would normally put on a taco is a great place to start. We love pico de gallo, sour cream, hot sauce, avocado, and even pickled red onions. Let your heart, or taste buds, lead the way. That is the key to getting the best results for you.
