How To Make Breakfast Cake In The Instant Pot
To begin making this decadent dessert combine the almond flour, baking powder, salt, and granulated sugar into a mixing bowl. For my original recipe I used my Kitchen Aid Stand Mixer to make the cake batter but you can also use a regular electric mixer or even mix by hand.
Give the flour mixture a quick mix and then add the eggs, olive oil, milk, and vanilla extract. The cake mix for this instant pot desserts recipe is gluten free due to the use of almond flour but if you do not have almond flour you can substitute all-purpose flour. Can You Put A Cake In The Instant Pot?
Yes! And I’m going to tell you how.
Now that you have mixed up this coffee cake instant pot recipes you will want to use your non-stick spray to generously coat the inside of your baking dish. I used a 7.5 x 15 inch glass baking dish but ultimately you want to use an oven safe dish that will fit into the inner pot of your instant pot. You can also use the official instant pot springform pan.
Optionally you can sprinkle brown sugar, chocolate chips, or both on the top of the cake before baking.
Use the pressure cooker trivet that comes with your instant pot to hold your baking dish up above the cooking liquid. You will need to put two cups water into the bottom of the inner pot of your electric pressure cooker. If you do not have a trivet the next best thing is to make a foil sling out of aluminum foil. Just form the foil into a ring that the baking dish can sit on.

How To Bake Instant Pot Coffee Cake
Carefully lower your prepared pan into the instant pot and cover the top with a small piece of aluminum foil. Bake on high pressure for 25 minutes and allow the instant pot to go through the natural release before opening the lid. The best way I have found is to put the 2 cups water into the small bowl or inner pot of the pressure cooker, then the trivet, and finally the baking dish with the cake mix.
After the best cake of all time has finished baking for 25 minutes allow the instant pot to do a natural pressure release. When the steam release handle has indicated that the pressure is all gone you can press cancel to turn off the instant pot and open the lid. I want to encourage you to be extremely careful when you are removing the coffee cake to put it on a cooling rack. The hot water inside of the instant pot is very hot and I do not want you to burn yourself. I have found that using the trivet to help lift up my cake, as well as good pot holders of course, makes it a little easier to navigate all of the excess moisture, steam, and boiling water.

Easy Instant Pot Coffee Cake (Gluten Free Recipe)
Once your instant pot coffee cake has cooled on a wire rack you are ready for the best part. Serve yourself a slice and enjoy with a nice hot cup of coffee. Chocolate lovers can sprinkle a few extra chocolate chips on top or you can drizzle your coffee cake with a little honey or maple syrup to bump up the sweetness.
Honestly, my favorite way to eat this instant pot coffee cake is with a giant cup of joe. My copycat Starbucks Mocha Latte with a little bit of Homemade French Vanilla Creamer next to a slice of this coffee cake makes for a truly fantastic start to my day.

Easy Instant Pot Coffee Cake (Gluten Free Recipe)

Ingredients
- 1 1/2 cups almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar
- 1 tsp vanilla
- 3 eggs
- 1/3 cup olive oil
- 1/2 cup milk
- Optional:
- brown sugar for topping
- chocolate chips for topping
- honey or maple syrup for serving
Instructions
- Mix together dry ingredients
- Add wet ingredients to flour mixture and mix until well combined
- Pour cake batter into a 7.5 x 15 inch baking dish that has been sprayed generously with non-stick baking spray
- Add 2 cups of water to the inner pot of instant pot
- Put trivet into instant pot
- Gently lower baking dish into instant pot on top of the trivet
- Cover baking dish with foil
- Bake for 25 minutes on high pressure
- Allow pressure in instant pot to release naturally
- Remove baking dish to a wire rack to cool
- Serve with any toppings and a delicious cup of coffee
