Ingredients
- 1 cup peanut butter
- 1 cup all purpose flour
- 1/2 cup honey
- 1/2 cup cauliflower rice, uncooked
- 1 tsp baking soda
Instructions
- Preheat oven to 350 degrees F and prepare two baking pans with silicone baking mats or parchment paper
- Mix together the peanut butter and honey until creamy
- Add the remaining ingredients and mix well
- Place scoops of batter, approximately 1 tablespoon, onto baking sheet and press down with a fork to slightly faltten the cookie for even baking
- Bake for 10-12 minutes
- Allow the cookies to cool completely. Cookies will firm up more as they cool.
Notes
To make this recipe gluten free substitue almond flour instead of all-purpose flour.
